Catherine Yung is a mistress in the art of Chinese tea with an enormous passion for her trade. Born in New York, raised in Hong Kong and received her education in London, Catherine was brought up surrounded by tall skyscrapers and bustling streets, yet what interested her was not the extravagance of the urban lifestyle, but the serenity she found in the Chinese tea ceremony.

She was exposed to the tea culture at a very young age. It was not because she is Chinese, and tea has been an essential part of Chinese formalities for over a millennium, but she was also influenced by her mother, Lily, as she was the traditional pu'er tea business since Catherine was young.

In the expeditions with her mother, Catherine spent her time surrounded by tea plantations, master tea brewers and makers, and after each of these tea journeys she found herself more mesmerised by the elegance of the tea ceremony, while becoming more knowledgeable about the trade.

Upon completion of her bachelor's degree in Central Saint Martins ("CSM") of University of the Arts London, Catherine returned to Hong Kong with the intention of continuing on her tea journey. With the demand for quality tea in Hong Kong and mainland China increasing over the past years, Catherine saw the opportunity and founded Yu Teahouse in 2013.

She also works as a tea consultant for various organisations and restaurants, including The Hong Kong Jockey Club, Tencent and Bo Innovation.

This workshop is hosted in hopes of promoting the Chinese tea culture to our HKIS members, to let more people enjoy the health benefits of tea and appreciate one of the Chinese's oldest traditions. It aimed to promote a healthy regimen of tea drinking that brings wellness to customers by offering the finest tea leaves at their establishment.

This 2-hour workshop aims to bring each audience with tea pairing experience for savouring tea, such as matching different kinds of snacks, sweets and other dishes. For instance, matching "yunwu" with dried okra, "tieguanyin" with almond crisps and "white peony" with dried apricots, the speaker, Catherine proposed that pu'er can be matched with some relatively saltier and greasier food whereas green tea and red tea with sweeter snacks to complement the fragrance of the tea.

This workshop also provide a chance to each audience for tea demonstration. Meanwhile, Catherine will also share the experience in picking the tea in different location in China. Our members could also raise the questions regarding the tea experience to our speaker in our last Q&A session.

是次茶藝訓練致力推廣茶業文化,盼將茶道年輕化,把茶葉文化傳承到年輕一輩,融合到香港人的生活文化中,特別是我們的香港測量師學會會員。讓更多的人享受茶對健康的益處,並欣賞中國最古老的傳統之一,促進飲茶的健康養生之道。

這兩小時的茶藝訓練目的是令每一個香港測量師學會會員學懂一定的品茶經驗,搭配不同的茶食、糖果和菜餚,達到調節口味的功效,籍此來打破一般人對茶道「傳統老舊」的印象,加深對茶道的認識。
